My Journey: From Greece to Green Bean

My journey into nutrition wasn't born in a classroom – it began during a life-changing internship in Greece. While I was studying nutrition, I had the incredible opportunity to live and work abroad. Surrounded by irresistible Greek food, I indulged (a bit too much!) and gained nearly 10 kilos in just 4.5 months.
Returning to Denmark where I lived at that time, I felt insecure in my body. My clothes no longer fit, and I no lon ger felt like myself. That moment in 2014 marked the beginning of a personal transformation – not just in body, but in mindset.
As women, we are often taught to give everything to others – our work, families, and careers – while putting ourselves last. I saw this pattern in the women I grew up around, and I knew I wanted to break that cycle. Making time to move my body, fuel myself with nutritious food, and simply prioritize my own wellbeing has been life-changing. Now, I want to help other women (and men!) do the same.
Through Green Bean Café and Green Bean Plus, I combine my love for delicious, wholesome food with evidence-based coaching that meets people where they are. Whether you're seeking balance, weight loss, strength, or self-confidence, I'm here to guide you every step of the way.
